Chef Martin Bieri’s passion for honest enjoyment is the most important ingredient in his cooking philosophy. You can taste it in every bite, from breakfast in the lounge to fine dining at the Michelin-starred chef's table. With three cuisine lines, we celebrate good taste every day, serving vegan friendly creations and relying on high-quality produce from the region.

Martin Bieri, a native of the Bernese Oberland, brings in a wealth of experience to the boutique hotel The Mansard. Bieri has worked in Davos, Lucerne, Bern and at the Gstaad mountain railway. Martin Bieri laid the foundations for his culinary career during his apprenticeship in the Emmental and his years of travelling in restaurants serving French cuisine. At the age of 25, he became a chef and designed his own menu for the opening of a 4-star hotel.
